Seeded Cinnamon Spice Banana Bread – Gluten Free!
This is a high protein, high fibre super healthy banana bread recipe.
It is gluten free, grain free, dairy free, sugar free, paleo and nut free. Pretty much a whole loaf of whole food goodness.
So healthy that I have been having it toasted with organic butter & honey the last couple of mornings for breakfast. And usually I do not believe in banana bread for breakfast!! Rather an occasional treat.
I have made this recipe quite savoury with just the natural sweetness of the bananas. I serve mine with a drizzle of honey on top. Those of you with super sweet tooth’s, try adding 1/2 cup of organic honey or maple syrup to the recipe.

3 Large Bananas
1/3 cup Coconut Oil, melted
1/4 cup Chia Seeds
2/3 cup Coconut Flour
1/3 cup Linseed Ground
1/3 cup Sunflower Seeds
1/3 cup Pepita Seeds
1 tsp Ground Cinnamon
1/3 tsp Ground Ginger
1/2 tsp All Spice
1 tsp Vanilla Extract
1 tsp Bicarb Soda
Preheat the oven to 180 degrees celsius. Line a rectangular cake tin with baking paper and grease the sides.
Blend together the bananas, coconut oil, eggs, cinnamon, ginger, cinnamon, all spice and vanilla.
Then mix in the coconut flour, chia seeds, linseed, sunflower seeds, pepitas and bicard.
Finally pour into the baking tin, top with extra seeds if you wish and bake away for 25-30 minutes.
Allow to cool, then slice it up and enjoy!
